Chorizo Pulav(Goan Pork Sausage Pulav)

Chorizo is a specially made pork sausage string which is usually available in Goa only.

Ingredients
  

  • 1/2 kg Chorizo cut them into 2 inch pieces, roughly 2-3 bulbs long, Pork Sausage
  • 1 1/2 cup Basmati rice washed and soaked for 10-15 mins
  • 2 nos Maggi cubes
  • 4 nos Tomato
  • 2 nos Onion big
  • 1 tbsp Ginger garlic paste
  • 2 nos Bay leaf
  • 4 nos Clove Grambu
  • 4 nos Cardamom Elakka
  • 2 one Cinnamon Karugapatta
  • 4 nos Pepper corns Crushed
  • 1 tsp Chilly powder
  • 1/2 tsp Turmeric powder
  • 1 tsp Coriander powder
  • 1 no Green pepper/Capsicum diced into small cubes
  • Salt As reqd
  • 1 tsp Sugar
  • 1 tsp Vegetable oil 1 tsp or even less as the sausage will release a lot of oil while cooking

Instructions
 

  • Heat oil in a thick bottomed pan. Add the spices one by one: clove, cardamom, cinnamon and pepper corns.
  • When a rich aroma comes, add onion, ginger-garlic paste, tomato and crushed maggi cubes.
  • Keep stirring to avoid sticking to the bottom of the pan. Add chilly powder, turmeric and coriander powder.
  • Now add capsicum, chorizo pieces, salt and sugar. Stir for few minutes.
  • When the oil separates, add the drained rice and fry for few minutes. This will help to finish the rice in good consistency. Now add water slightly above the level of rice.
  • Close it tightly and cook for few minutes. Garnish with coriander leaves and serve hot with raita.
  • ** Note for Chorizo(Pork Sausage): For the convenience of cooking only remove the strings/threads. You can remove the skin at the time of eating if you need to. The skin is also edible.
