Thai-Indian Coconut Rice

Ingredients
  

  • 400 g Thai fragrant rice washed
  • 1/2 cup Coconut grated
  • 400 g Coconut milk
  • 350 ml Water
  • 1/2 tsp Coriander powder
  • 2.5cm piece Cinnamon stick Karugapatta
  • 1 lime Lemon juice
  • 1 no Bay leaf Karuga ela
  • 2 nos Dry red chillies broken
  • 1 tbsp Ground nuts
  • 2 springs Curry leaves
  • 2 springs Coriander leaves finely chopped
  • Coconut oil As reqd
  • Salt As reqd

Instructions
 

  • For preparing thai-indian coconut rice, take a vessel and add in washed rice, coconut milk, water, coriander, cinnamon stick, lemon juice, bay leaf and salt. Allow it to cook on low flame in a closed pan till the water evaporates.
  • Toss in the curry leaves and coriander leaves. Mix slowly.
  • In another vessel roast the groundnuts and dry red chillies in coconut oil. Keep it aside.
  • In the same oil roast grated coconut till light brown.
  • Garnish the coconut rice with roasted coconut, groundnuts and dry red chillies.
  • Thai-indian coconut rice is ready. Serve hot with chicken curry, prawn curry, etc.
