For preparing coconut duck in mud pot, fry the coconut in a vessel until it becomes brown and keep it aside.
In the same vessel heat oil. Saute onions, ginger-garlic paste, green chillies and chicken cubes for 5 minutes on low flame.
Add in the duck pieces, tomatoes, pepper powder, turmeric powder, garam masala and lime juice. Fry it for 5 minutes on low flame.
Put the duck pieces and the sauted masala into a mud pot. Pour a little water and allow it to cook.
Pour in the coconut milk, curry leaves, salt and tamarind juice. Allow it to simmer for 10 minutes.
Garnish with coriander leaves and remove it from the oven.
Coconut duck in mud pot is ready. Serve hot with rice.
