For preparing sweet and sour duck, marinate the duck pieces with light soy sauce, rice wine, white pepper, sesame oil and salt for 30 minutes.
To prepare the sauce, heat the vinegar in a pan. Add the sugar, light soy sauce and tomato ketchup. Stir till the sugar dissolves and keep it aside.
In another vessel heat oil and stir-fry the marinated duck until it turns golden brown on low flame. Remove it and keep it aside.
Then heat oil in another deep frying pan.
Saute the garlic and ginger till a nice smell comes.
Add in the onion, carrot and capsicum. Allow it to cook for 5 minutes on low flame.
Toss in the fried duck and cook for 3 minutes on low flame.
The add in the sauce and spring onion. Mix well.
Sweet and sour duck is ready. Serve hot with rice.
