Tarragon Duck Soup

Ingredients
  

  • 300 g Boneless duck chopped
  • 55 g Unsalted butter
  • 1 no Onion chopped, big
  • 625 ml Duck stock
  • Pepper powder As reqd
  • 2 tbsp Tarragon chopped
  • 150 ml Double cream
  • Salt As reqd

Instructions
 

  • For preparing tarragon duck soup, cook the duck pieces in salt water, drain it and shred it. Keep it aside.(keep the stock)
  • Melt the butter in a vessel and fry the onion till it becomes transparent.
  • Add the duck to the pan with half of the duck stock. Allow it to cook on low flame. Allow it to cool.
  • Blend it to a fine paste.
  • Then add the remaining stock and season with salt and pepper.
  • Garnish the soup with fresh tarragon.
  • Tarragon duck soup is ready. Serve hot with deep-fried croutons.
