For preparing mouth watering duck curry, pound the ginger, dried red chillies, lemon grass and galangal into a coarse paste.
Then add the shrimp paste and brown sugar. Keep this curry paste aside.
Toss in the duck into a vessel.
Add the curry paste and stir well.
Cook the duck over a low flame, stirring occasionally, until the duck has changed colour.
Then add water, turmeric powder and soy sauce into the duck. Allow it to simmer gently till the duck is tender.
Add the shallots, garlic, tamarind juice, sugar and fish sauce.
Garnish with red chillies.
Mouth watering duck curry is ready. Serve hot.
