Ingredients
  

  • 675 g Mussels cleaned
  • 2 1/2 cm Ginger crushed
  • 8 nos Dried red chillies soaked in warm water for 20 minutes
  • 2 nos Lemon grass stalks finely chopped
  • 1 tbsp Galangal finely chopped
  • 1 tbsp Shrimp paste
  • 2 tbsp Brown sugar
  • 600 ml Water
  • 2 tsp Turmeric powder
  • 1 tsp Dark soy sauce
  • 4 nos Shallots finely chopped
  • 1 tbsp Garlic finely chopped
  • 3 tbsp Tamarind juice
  • 1 tsp Sugar
  • 1 tbsp Fish sauce
  • Red chillies As reqd

Instructions
 

  • For preparing yummy mussel curry, pound the ginger, dried red chillies, lemon grass and galangal into a coarse paste.
  • Then add the shrimp paste and brown sugar. Keep this curry paste aside.
  • Toss in the mussels into a vessel.
  • Add the curry paste and stir well.
  • Cook the mussels over a low flame, stirring occasionally, until the mussels has changed colour.
  • Then add water, turmeric powder and soy sauce into the mussels. Allow it to simmer gently till the mussel is tender.
  • Add the shallots, garlic, tamarind juice, sugar and fish sauce.
  • Garnish with red chillies.
  • Yummy mussel curry is ready. Serve hot.
