Ingredients
  

  • 450 g Boneless duck finely chopped
  • 600 ml Coconut milk
  • 3 tbsp Red curry paste
  • 3 tbsp Thai fish sauce
  • 2 tbsp Brown sugar
  • 2 nos Lemon grass stalks crushed
  • 75 g Ground peanuts roasted
  • 2 nos Red chillies slit
  • 5 nos Lime leaves torn
  • Pepper powder As reqd
  • 10 nos Basil leaves
  • Salt As reqd

Instructions
 

  • For preparing duck curry in peanut sauce, pour half the coconut milk in a vessel, heat it stirring constantly, until it begins to boil and separate.
  • Add the red curry paste and cook it over medium flame until a nice smell comes.
  • Then add the fish sauce, brown sugar and lemon grass.
  • Continue to cook until the colour of the curry sauce becomes dark.
  • Pour in the remaining coconut milk and allow it to the boil.
  • Toss in the duck and ground peanuts. Allow it to cook for till the duck becomes tender.
  • Put in the red chillies and lime leaves and salt.
  • Garnish with basil leaves.
  • Duck curry in peanut sauce is ready. Serve hot.
