For preparing special mixed vegetables curry, cook the potatoes, beans and carrots in a large pan and with salt water till ready.
Add in the brinjal and allow it to cook.
Pour in the coconut milk, cover and cook for 10 minutes on low flame.
In a pan heat the oil, add the curry leaves and the flaked dry chillies.
Then add in cumin powder, coriander powder and turmeric powder. Saute it for 1 minute on low flame.
Toss it into the vegetables and mix well.
Special mixed vegetables curry is ready. Serve hot with chapatti, bread, puloa, etc.
