Ingredients
  

  • 225 g Potatoes cubed
  • 125 g Beans chopped
  • 150 g Carrots cubed
  • 1 no Brinjal cut lengthwise
  • 1 cup Fresh coconut milk
  • 1 tsp Flaked dried red chillies
  • 1 tsp Cumin seeds powdered, Jeerakkam podi
  • 1/2 tsp Coriander powder
  • 1 tsp Turmeric powder
  • 3 springs Curry leaves
  • Water As reqd
  • Oil As reqd
  • Salt As reqd

Instructions
 

  • For preparing special mixed vegetables curry, cook the potatoes, beans and carrots in a large pan and with salt water till ready.
  • Add in the brinjal and allow it to cook.
  • Pour in the coconut milk, cover and cook for 10 minutes on low flame.
  • In a pan heat the oil, add the curry leaves and the flaked dry chillies.
  • Then add in cumin powder, coriander powder and turmeric powder. Saute it for 1 minute on low flame.
  • Toss it into the vegetables and mix well.
  • Special mixed vegetables curry is ready. Serve hot with chapatti, bread, puloa, etc.
