Pumpkin(Mathanga) In Spicy Tomato Sauce

Ingredients
  

  • 675 g Pumpkin chopped, Mathanga
  • 1 no Onion finely chopped
  • 1 tbsp Tomato puree
  • 400 g Tomatoes chopped
  • 2 cloves Garlic crushed
  • 1/2 tsp Cumin seeds
  • 1/2 tsp Mustard seeds
  • 1/4 tsp Turmeric powder
  • 1/4 tsp Chilly powder
  • 1 tsp Garam masala
  • 1 tsp Cumin seeds powdered
  • 1 tsp Coriander powder
  • 2 springs Coriander leaves finely chopped
  • 150 ml Water
  • 3 tbsp Oil
  • Salt As reqd

Instructions
 

  • For preparing pumpkin in spicy tomato sauce, heat oil in a deep frying pan.
  • Splutter cumin seeds and mustard seeds.
  • Add in the onion and garlic. Saute for 5 minutes.
  • Then add turmeric powder, chilly powder, coriander powder, cumin powder and salt. Saute for 2 minutes.
  • Add the pumpkin and half cook it.
  • Then add in the tomato puree and chopped tomatoes into the pan. Mix well.
  • Pour water and cover the pan. Allow it to simmer until the sauce thickens.
  • Stir in the coriander leaves and garam masala. Allow it to cook for until the pumpkin becomes tender.
  • Pumpkin in spicy tomato sauce is ready. Serve as a side dish.
