Potato Mezhukkupuratti Dry

Potato Mezhukkupuratti is a quick and tasty side dish that can be prepared in a jiffy, when time runs short. When you are running out of fresh stock, this amazing dish comes in handy, a very nutritious and tasty side dish. This Mezhukkupuratti is unique and delicious with cooked potato pieces sautéed with flavorful seasonings. Kids love the dish and make a delicious dish in lunch boxes. The perfect potato sauté or urulla kizhangu mezhukkupratti as it is called in Malayalam consist of thin long golden yellow juliennes of potato glistening with a light coating of oil and a sprinkling of small black mustard seeds. Ingredients
  

  • 3 nos Potato cut into small pieces, medium
  • 5 nos Green chillies slit
  • 2 nos Onion chopped, medium
  • 3 nos Dry red chillies
  • 2 tsp Mustard seeds
  • 2 spring Curry leaves
  • 1 tsp Turmeric powder
  • Salt As reqd
  • Oil As required
  • 1 1/2 cup Water

Instructions
 

  • For preparing , take a vessel, boil water, salt, green chillies, turmeric powder and potato pieces. Close the lid & boil for 10 minutes on low flame. Switch off the flame and cool well.
  • In a non-stick pan, heat 2 tbsp oil and splutter mustard seeds. Then add curry leaves and saute onion till translucent.
  • Add the cooked potato mix to the pan. Keep stirring off and on for 5 mins.
  • Break dry red chillies and add to above mix.
  • Now it is ready. Serve hot with rice.
