Fried Noodles With Shrimp And Squid
This lightly spiced fragrant dish packed with shrimp, squid, noodles and tender vegetables makes a great choice as a main dish

- 1 packet Bean vermicelli noodles soaked in water, cellophane noodles
- 1 tbsp Dark soy sauce
- 1 tsp Garlic minced
- 3 tbsp Oyster sauce
- 300 g Shrimps peeled and de-veined
- 250 g Squid meat
- 50 g Dried Chinese mushrooms soaked in hot water and diced
- 1 no Carrot medium sized and cut into fine matchsticks
- 1 no Red pepper cut into strips
- 1 no Onion cut into wedges
- 1/2 tsp White pepper
- Oil As reqd
- Salt As reqd
- Sugar A pinch
Soak the vermicelli in plenty of warm water until soft. Drain, refresh in cold water and drain again.
Heat 1 tbsp oil in a wok in high heat. Add garlic, shrimps and squid. Cook for 2 or 3 minutes or until just cooked. Remove and keep aside.
Heat oil in another wok, add onions, mushrooms and vegetables. Stir fry for 2 more minutes. Season with salt and pepper.
Add vermicelli, soy and oyster sauce to the wok. Stir until well combined with the sauce. Add shrimp and squid to the noodles. Check for seasoning.
Remove from heat. Garnish with spring onions and sliced red chillies.
