White Bean Nachos
White beans which are a rich souce of nutrients, is cooked and served with homemade corn chips. This dish is a diabetic delight.

- 1 tsp Olive oil Extra virgin olive oil
- 1/2 no Carrot diced
- 1 no Green onions finely chopped
- 1 clove Garlic crushed
- 1/2 tsp Cummin seeds ground
- 1/2 tsp Coriander ground
- White beans(canned lima/cannellini) - 200g, canned
- 1/4 cup Chicken stock low salt
- 1/2 tbsp Lemon juice
- 2 tbsp Coriander leaves fresh and chopped
- 1/4 cup Tace sauce no added salt
- 2 corn Corn chips homemade
Take a frying pan and heat oil. Add chopped onion, diced carrot and crushed garlic. Reduce heat and saute in medium heat.
Cook for 3 minutes and keep stirring.
Add ground coriander and ground cummin. Cook for a minute until a frying smell comes.
Add white beans and pour chicken stock. Simmer for sometime and mash the beans occasionally.
Cook for 10 minutes until the gravy acquires a thick consistency.
Pour lemon juice and chopped coriander leaves.
White bean nachos is ready and serve the bean mixture and sauce in a serving tray surrounded by corn chips.
