For preparing Spicy Pork Kerala Style, mix chopped pork with turmeric powder, pepper powder, salt and vinegar. Set aside for an hour.
Cook the pork in a pressure cooker until fully cooked.
Fry the onions in oil in a heavy bottomed pan.
:- Add 1/2 tsp of sugar which will increase the flavour of the onions. After they turn slightly brown, add the chillies, ginger and garlic.
Add the turmeric powder and fry for a minute.
Add the garam masala.
:- If required some pepper powder and chilly powder.
Add the chopped tomatoes at this stage and fry till gravy turns slightly thick.
Now add the cooked pork mix into the pan. Mix them thoroughly and add half a cup of water and the coconut milk.
Check the salt at this stage.
:- Add the chopped potatoes (Optional).
Cover and cook till the spice permeates the pork.
Uncover and stir the mix untill the gravy becomes thick.
Garnish with freshly chopped coriander leaves.
