Kerala Easy Egg Curry

Different and Easy Egg Curry!!

Ingredients
  

  • 4 nos Eggs
  • 1/2 of Onion chopped
  • Ginger garlic paste - 1/4 tsp
  • 4 nos Green chillies chopped
  • 2 nos Tomatoes grinded in mixer
  • 1 Tomato finely chopped
  • 1 tsp Chilly powder
  • 1/2 tsp Pepper powder
  • 1/4 tsp Turmeric powder
  • Salt As reqd
  • Coriander leaves chopped
  • 4 tsp Oil
  • 1/2 cup Water

Instructions
 

  • Heat 2 tsp of oil in a vessel.
  • Add green chillies, onion and fry till onions become light brown.
  • Add ginger-garlic paste and fry nicely.
  • Add the chopped tomato and fry for 2 mins.
  • Add chilli powder, turmeric powder and pepper powder and fry for a min.
  • Add the grinded tomato paste, coriander leaves and salt.
  • Cook for 3 mins.
  • Add water, cover and cook.
  • Meanwhile when the above gravy is cooking, heat up a nonstick tava and add the remaining oil.
  • Directly break the eggs one by one into the tava.
  • :- Make sure the egg yolks dont break.
  • Add 4 pinch of salt and 4 pinch of pepper powder all over on top of the egg(only one side).
  • Turn the egg and cook well on both sides.
  • Once the eggs are done , cut the omelette into 4- 5 pieces.
  • Add these pieces into the gravy, cover and cook for 5 mins.
  • Garnish with coriander leaves.
  • :- Serve with rice.
