Remove the skin of potato and slice into squares.
Slice the onion into thin sections.
Slit the green chillies lengthwise.
:- Depending on hotness required, u can increase / decrease no. of chillies.
Slice the ginger into thin sections.
:- You can add half of a tomato sliced for tanginess, if u like.
Extract thick coconut milk from the grated coconut by adding water and blending in a mixer. Keep this 1st coconut milk aside. Add some more water and extract second coconut milk too.
Pressure cook the above ingredients with salt and second milk extract of coconut. Cook the potatoes for 5 minutes or so till done.
After opening the lid of the cooker, add the thick coconut milk.
:- The milk should have sufficient thickness as the gravy should not be too watery.
:- Don`t allow this to boil.
Simmer for 2 minutes on low flame.
Switch off the stove.
Season it with coconut oil, curry leaves and coriander leaves.
