Chakka Varattiyathu Easy

Chakka Varattiyathu Easy is a tasty jam or preserve that is very popular in Kerala. Most of the Malayalees have jackfruit trees in their vicinity and hence this dish is an all time favorite. This is unique and special with an awesome thick tasty preserve that kids devour as jam with chappathis etc. The traditional age old recipe was time consuming and here you can discover an easy preparation of the dish with no compromise to taste. This dish is prepared in a vessel named ‘uruli’. Stir well the contents in the ‘uruli’ until the jackfruit mixture solidifies and you can relish on this beautiful sweet. Generally this jackfruit preserve is made during jackfruit season and is stored for future use.”Chakka” is a Malayasam word which means Jackfruit and “Varatti” means to cook until there is no moisture content. Jackfruit is a rich source of dietary fiber that makes it a bulk laxative. This helps to improve digestion. It is a great source of Vitamin C and antioxidants, which can strengthen your immune system.

Ingredients
  

  • 1 kg Ripe jackfruit fleshy pieces Chakkachula
  • 200g or Jaggery Sharkkara
  • 4 tbsp Ghee
  • 1 tsp Dry ginger(powdered) Chukku
  • 1 tsp Cumin seeds(powdered) Jeerakam
  • 4 nos Cardamom powdered, Elakka

Instructions
 

  • For preparing Chakka Varattiyathu Easy, first place the jackfruit pieces in a pressure cooker along with 1 1/2 glass of water.
  • Cook upto 2 whistles.
  • Allow it to cool and grind it in a mixer grinder.
  • :- Make sure that there are no lumps in it.
  • Place a thick bottomed vessel (preferably a Urali) on flame.
  • Put the ground jackfruit and the jaggery in it and stir well.
  • Add ghee a little by little in between and stir well continuously.
  • Stir till the water content gets evaporated completely.
  • When it gets solidified well, add the powdered dry ginger, cumin seeds and cardamom and mix well.
  • Relish Chakka Varattiyathu and enjoy.
