Churakka Vanpayar Thoran

Ingredients
  

  • 1 kg Churakka finely chopped, Bottle gourd
  • 200 g Van payar Black eyed beans
  • 1/4 of Coconut
  • 4 nos Green chillies
  • 1/4 tsp Cumin seeds Jeerakam
  • 1/2 tsp Turmeric cpowder
  • 5 nos Garlic cloves
  • 1 tsp Mustard seeds
  • Salt As reqd
  • Curry leaves Few
  • 2 tbsp Plain rice
  • 3 tbsp Coconut oil
  • 2 nos Dry red chillies Kollamulaku

Instructions
 

  • For preparing Churakka Vanpayar Thoran, first peel off the skin and deseed the bottle gourd.
  • Clean it well and chop it finely.
  • Clean well the vanpayar too and cook it separately in a pressure cooker.
  • Place the grated coconut, cumin seeds, green chillies, garlic, turmeric powder and curry leaves in a mixer bowl and run it once to get a coarse form.
  • Mix the above with the finely chopped gourd and add salt.
  • Heat oil in a pan or a kadai.
  • Splutter mustard seeds and saute dry red chillies, rice and curry leaves.
  • Add the gourd-coconut mixture and mix well.
  • Cover and cook on a low flame.
  • Stir occasionally.
  • After 2 to 3 minutes, remove the lid and stir well.
  • Add the cooked van payar and mix well again.
  • Continue to cook, till done.
  • Enjoy tasty nutritious Churakka Vanpayar Thoran.
