Beans-Egg Poriyal

A simple side dish with beans and eggs

Ingredients
  

  • 1/2 kg Beans
  • 2 nos Onions finely minced
  • Curry leaves A sprig
  • 2 nos Green chillies finely minced
  • Salt As reqd
  • 1/2 tsp Turmeric powder
  • 3/4 tsp Chilly powder
  • 1/4 tsp Cumin powder Jeerakam
  • 1/2 tsp Coriander powder
  • 1/2 tsp Ginger grated
  • 2 nos Garlic pods finely minced
  • 4 nos Eggs
  • Oil As reqd

Instructions
 

  • Cut beans into small pieces like for poriyal.
  • Steam and keep aside.
  • Fry onion and green chillies, till the onions turn brown.
  • Lower the flame and add curry leaves, salt, turmeric powder, chilly powder, cumin powder, coriander powder, ginger, garlic and fry for 3 -4 mins.
  • Add the beans and fry for a further 3 - 5 mins.
  • Add eggs and scramble fry till done.
  • Remove from fire.
