Ingredients
  

  • 3 cups All purpose flour Maida
  • 1/2 tsp Baking powder
  • 4 nos Eggs
  • 1 1/2 cups Sugar
  • 1 1/2 cups Oil
  • 3 tbsp Ghee
  • 4 nos Cardamom powdered, Elakka
  • 1/4 tsp Vanilla essence
  • 1/2 tsp Lemon juice
  • Salt A pinch
  • Cashews for garnishing
  • Raisins(Onakka munthiri) for garnishing

Instructions
 

  • For preparing Easy Kerala Cake, first beat the eggs using a handheld electric mixer into a large bowl.
  • Add sugar, oil and ghee and mix at the lowest speed again for a few mins.
  • Mix together maida, baking powder and salt.
  • Add this little by little to the bowl and mix at a medium speed for at least 15 mins.
  • Add essence, lemon juice and cardamom and mix for 1 more min.
  • Preheat oven to 350 degree F.
  • Pour the batter into a greased baking tray.
  • Garnish by putting cashews and raisins neatly over it.
  • Bake in oven for 40 - 45 mins(or till light brown).
  • Prick with a sharp knife and it should come out clean, if done.
  • Easy Kerala Cake is ready.
