Kerala Banana Chips

Kerala Banana Chips are a favorite crunchy crispy snack, one of the indispensable dishes in Onam Sadhya. Banana wafers are undoubtedly the most popular snack all over India, especially in regions of Kerala, where these yellow bananas grow throughout the year. Kerala Banana Chips are unique and special with sliced raw plantains fried in hot boiling oil. Some people prefer to prepare chips when the bananas just begin to ripen in order to get a sweet and spicy flavor. Take care that the chips are not burnt while frying. Chips should be packed in air tight containers for longer lasting periods. No Sadhya is ever complete without these crunchy chips. Banana wafers are nutritious, healthy and a favorite with all age groups. While it is raining outside, it is just nostalgic to relish on these crunchies with a cup of hot tea. Ingredients
  

  • 1 kg Unripe plantains(Vazhakka) large
  • 300 g Coconut oil
  • Salt As reqd
  • 1/2 glass Sour Curd

Instructions
 

  • For preparing the traditional styled banana wafers, first peel off the skin of the large sized plantains and put them in water.
  • Pour sour curd into this water.
  • :- The purpose is to remove the plantains' serum.
  • Leave this for half an hour.
  • Strain the excess water off.
  • Heat oil in a wide pan(preferably Urali).
  • Bring it to boil.
  • Slowly, slice the plantains using a chips slicer directly into this oil.
  • When it's cooked, sprinkle some salt water and continue stirring.
  • Turn over the chips to cook both the sides.
  • Once sure that they are crisp, use a strainer to take the chips out and place them on an absorbent paper to drain the excess oil off.
