Heat oil in a frying pan or pressure pan.
Add fish, ginger, garlic, coriander leaves and green chillies and saute, till the fish becomes translucent(white).
Add pineapple and tomato and saute for 2 mins.
:- Do not let the fish turn brown.
Add coriander powder, salt and coconut milk simultaneously to this mixture.
Heat it for 2 - 3 mins.
Add chilly powder and 8 - 10 basil leaves and bring them to a boil.
Garnish with 2 - 3 basil leaves and 2 pineapple cubes.
:- Serve with fried rice, biriyani, roti, naan, appams or you name it.
