Ingredients
  

For masala:

  • 2 tbsp Coriander seeds
  • 2 tsp Bengal gram Kadalaparippu
  • 1 tsp Fenugreek Uluva
  • 5 nos Red chillies Kollamulaku
  • 4 sprigs Curry leaves
  • 1/2" piece Asafoetida Kayam
  • few sprigs Coriander leaves optional
  • 3/4 cup Coconut
  • 2 tbsp Oil

Vegetables (You can use 1 to 2 cups of any of the below combinations of vegetables) Group 1:

  • Potatoes
  • Tomatoes
  • Onions

Group 2:

  • Small onions Kunjulli Cheriya-ulli saute in oil before cooking

Group 3:

  • Brinjal Vazhuthananga
  • Onion
  • Tomato

Group 4:

  • Drumstick
  • Potato
  • Onion
  • Tomato

Group 5:

  • Ashgourd
  • Potatoes
  • Tomatoes
  • Onion

Group 6:

  • Ladies finger saute before boiling

Other Ingredients:

  • 1/2 cup Red gram(Thuvaraparippu)
  • Lemon Size Ball Tamarind (Puli)
  • 1/2 tsp Turmeric powder
  • as reqd Salt
  • Corianderleaves for garnishing

For seasoning:

  • 1 tsp Mustard seeds
  • 2 nos Red chillies Kollamulaku
  • 1/4 tsp Fenugreek Uluva
  • 2 sprigs Curry leaves

Instructions
 

  • Heat oil in a pan or a kadai.
  • Fry all ingredients for the masala by adding them one by one(or each separately) till they lose their raw flavor.
  • Grind them to a fine paste.
  • Boil red gram and mash.
  • Add vegetables (except tomato) along with turmeric powder, salt and allow to boil till vegetables are cooked.
  • Soak tamarind in 1/4 cup water and squeeze out the juice and add this to the boiling vegetables.
  • Add cut tomatoes and allow it to boil.
  • Add the ground masala and boil.
  • Heat oil in another small frying pan.
  • Splutter mustard seeds, fenugreek seeds, red chillies and curry leaves.
  • Pour the above seasoning into the sambar.
  • Garnish with coriander leaves.
  • :- Serve with rice, dosas or idlis.
