Tamil Nadu Easy Lemon Rice

Ingredients
  

  • 250 gm Rice
  • 2 tbsp Oil
  • 10 gm Mustard seeds
  • 8-10 nos Curry leaves
  • 20 gm Bengal gram Kadalaparippu
  • 20 gm Black gram Uzhunnuparippu
  • 2-3 nos Red dry chillies Kollamulaku
  • 1" piece Ginger finely chopped
  • 2 nos Green chillies finely chopped
  • 1 no Onion finely minced, large
  • Turmeric Powder A pinch
  • 10 gm Peanuts Nelakadala
  • 1 no Lemon Juice
  • Salt As reqd

Instructions
 

  • Boil the rice till it is tender, strain water and keep aside.
  • Heat oil in a pan.
  • Add mustard seeds, curry leaves, Bengal gram, black gram and red dry chilly and stir well.
  • When these turn a little brown in colour, add green chillies, chopped ginger, minced onions, peanuts and turmeric powder.
  • Stir well and keep on flame for two minutes.
  • Add pre-boiled rice, lemon juice and salt.
  • Keep on flame for about 3-4 minutes.
