Uppittu

Ingredients
  

  • 1 cup Semolina Rava/Sooji
  • 1/2 no Onion
  • 1/4 no Potato
  • 1/2 tsp Ginger grated
  • Salt As reqd
  • 1 tsp Sugar
  • Chopped coriander leaves
  • 3 tbsp Grated fresh coconut
  • 2 tsp Ghee
  • For seasoning:
  • 3 tbsp Oil
  • 2 tbsp Peanuts Nelakadala
  • Turmeric powder
  • 1 tsp Mustard seeds
  • 1 tsp Black gram Uzhunuparippu
  • 2 nos Red dry chilly Kollamulaku
  • Curry leaves A few
  • Asafoetida A pinch, Kayam

Instructions
 

  • Roast rava on a low flame. Keep aside and allow it to cool.
  • Cut onion and potato into small pieces.
  • Heat oil in a heavy bottom pan.
  • Add all the seasoning ingredients
  • Add onion and fry till it becomes translucent.
  • Add potato and fry for a few minutes.
  • Add 1 1/2 cups of water and cover the lid.
  • Bring it to boil and let the potatoes cook nicely.
  • Mix grated ginger, salt and sugar. Lower the flame.
  • Add roasted rava little by little. Keep stirring while adding, so that there will not be any lumps.
  • Close the lid and cook for few minutes.
  • Garnish with coriander leaves and grated coconut. Drizzle ghee on it.
  • :- Serve hot.
