North Indian Tasty Mutton Biriyani

Ingredients
  

  • 4 cups Basmati Rice
  • 1 kg Mutton
  • 1 cup Curd Thayiru
  • 2 cups Onion
  • 2 nos Tomatoes
  • 1 cup Coriander leaves
  • 1 cup Mint Leaves Pudhina
  • 1 inch Ginger
  • 1 no Garlic pods big
  • 1 cup Oil
  • 3 nos Cloves Grambu
  • 3 nos Cardamom Elakka
  • 2 sticks Cinnamon Karugapatta
  • 1 tsp Turmeric powder
  • 2 tsp Cumin powder Jeerakam
  • 2 tsp Coriander powder
  • 1 tsp Chilly powder
  • 6 nos Chillies
  • Salt As reqd

Instructions
 

  • For Masala: 1)Grind ginger, garlic, mint and coriander leaves to a fine paste along with yogurt/curd.
  • For Biryani: 1)Wash the rice and meat pieces.
  • Heat oil in a pan and fry all the spices, green chillies and onions till they turn golden brown.
  • Add the ground masala paste and finely chopped tomatoes till they are well cooked.
  • Add the washed meat and water.
  • When it starts to boil, add salt along with turmeric powder and chilly powder.
  • Add the rice and allow it to cook for about 15 minutes.
  • For Dhum: 1)Cover the half cooked biryani and over this keep red hot coal for about 20 minutes. Stir in-between once. Keep it close till it is served.
  • :- Serve hot with any spicy curry and raitha.
