Mix rava and maida.
Add water to make a tight dough.
Make large chappathis using this dough and cut out small round shapes from it.
Deep fry these in oil till they become crisp.
Soak tamarind in water for 3 mins. Extract the juice and keep it aside.
To make the sauce, grind together mint leaves, coriander leaves, salt and green chillies into a thick paste.
Mix the ground paste with the tamarind extract.
Boil potatoes and cut them into small pieces (Do not mash).
Mix some salt and red chilly powder on the potatoes and fry in oil.
While serving, make a hole inside each puri and place some amount of sauce inside it along with a potato piece.
