Boil potatoes in slightly salted water.
Lower the heat and cover the pot.
:- Leave lid slightly ajar to prevent overflow.
When potatoes are fork tender (about 12-15 minutes of mild boiling), drain into a colander.
Reserve about 3/4 cup of water.
Put the potatoes back into the cooking pot.
Mash potatoes with butter, until butter is distributed evenly. (Potatoes will be lumpy.)
Add enough milk or cream to make the mixture smoother.
Add eggs, salt and pepper to taste.
Continue mashing. When mixture is well distributed, transfer to an oven to table baking dish.
Add a little more butter. Sprinkle paprika to add colour.
Bake uncovered at 350 degrees F until the potatoes begin to get a light crust which should come around 30-40 minutes.
