Peanut-Lemon Rice

Peanut-Lemon Rice is a very tempting and delicious south indian rice dish prepared by adding lemon juice and peanut while stir frying steamed rice in spices.You can also prepare this simple dish with left over rice.

Ingredients
  

  • 2 cup Cooked biriyani Rice
  • 1/4 cup Peanut
  • 1/2 tsp Turmeric powder
  • Red chilly 2
  • 1 1/2 tbsp Lemon juice
  • Mint leaves
  • Salt to taste
  • 2 tbsp Oil

Instructions
 

  • Heat oil in a small frying pan,add peanut and fry until crunchy.Then add dry red chilly,mint leaves,turmeric powder,saute for few seconds.
  • Add cooked rice and mix well.add salt only if needed,because cooked rice itself have some salt.
  • Add lemon juice and remove from the flame.mix well and keep the lemon rice covered for the flavors to blend for 5 minutes.
  • Serve the lemon rice with papads.
