Instructions
Chop mango in preferred sizes and dry in sun light for 2 hours. Keep aside.
Now in a pan, dry roast red chilli, and all other ingredients: coriander seeds, fennel seeds and fenugreek seeds. Take care and do not burn the spices. Stir in low flame and allow ingredients to cool.
Now in blender add all roasted items and grind well.
Next, add salt and mix well.
Now mix with mango pieces.
Finally, heat oil and splutter mustard seeds. Pour in the prepared mango mix.
Now again keep in sunlight for 2-4 hours and transfer to glass jar.
Now its ready to serve. Sweet and sour mango pickle is ready.
