Quick and easy chicken fried rice is a speedy one dish meal the whole family will love.chicken and vegetables makes fried rice dishes a great go to in time crunch

Ingredients
  

  • 1 kg Basmati rice
  • 3 tbsp Olive oil
  • 2 Onion
  • 2 Carrot
  • 250 g Beans
  • 2 tbsp RKG
  • 2 tsp Tomato sauce
  • 2 tsp Soy sauce
  • Mint as reuired
  • 1 Capsicum
  • 1 tsp Pepper powder
  • 100 g Cashew nuts
  • Salt to taste
  • Water rerquired

Instructions
 

  • Soak basmati rice for 20 minutes.drain out the rice and cook rice in salted boiling water until 80 percentage done.strain it trough colander and let it cool
  • Clean and wash the chicken pieces,combine tomato sauce,soy sauce and salt with chicken
  • Heat olive oil in a vessel and cook until it done.keep stirring to prevent burning.
  • Heat RKG in a vessel and saute onion and cashew nuts for 1-2 minutes
  • Add the veggies,salt and pepper powder.saute it for 5 minutes
  • Add the cooked chicken pieces
  • Add cooked rice,mix gently.combine everything well without breaking the rice
  • Quick and easy fried rice is ready now.serve hot with gravy of your choice
