Eggplant Chutney

Eggplant chutney is a spicy and tangy chutney, eggplant/ brinjal blended with ginger, garlic, tomatoes, green chilies and tamarind. It is usually accompanied with rice or phulka.

Ingredients
  

  • 1 large Eggplant
  • 5 Red chili
  • 4 pods Garlic
  • ½ piece Tamarind
  • ¼ cup Coconut
  • Salt as per taste
  • Oil coconut/ gingelly oil – 2 tsp

Instructions
 

  • In eggplant apply oil and burn it low flame . burn all side well (refer pic)
  • Allow to cool and peel the skin
  • Now in pan add red chili and garlic and tamarind roast well
  • Now add mustard seed and turn off before it crack
  • Now add coconut and mix well and allow too cool
  • Now in blender add red chili, tamarind and garlic and grind coarsely
  • Now add coconut and mustard blend roughly
  • Now add eggplant and blend one mix well transfer to bowl
  • Eggplant Chutney is ready to serve. Top oil before serving.
