Egg bhurji is a soft creamy scrambled egg can be enjoyed on their own as a quick meal for a complete break fast and it is also inherently a simple dish
For preparing egg bhurji Heat oil in a vessel and add cumin seeds then add the chopped onion, green chilly, curry leaves and salt to taste.saute it for 5 minutes
When the onion gets light brown in colour,add tomato and cook for another 3-4 minutes
Add pepper powder,turmeric powder,garam masala to this anf saute till the raw smell disappear
Add the whisked eggs and coriander leaves to this and combine well
Now the egg bhurji is ready to serve.serve it hot with chappatis
