Zucchini Noodles

Ingredients
  

  • 2 Zucchinis julienned and left in a colander lined with paper towel
  • 1 tblsp peanut butter all natural
  • 1 tblsp rice wine vinegar
  • 1 tblsp water
  • 1 tblsp agave nectar
  • 1/2 tblsp low sodium soy sauce or liquid Aminos
  • 1/2 inch grated ginger

Instructions
 

  • Mix all the ingredients into a smooth paste. You can add 1/2 tbsp of toasted sesame oil for more flavor. Add dressing before you serve the salad. You can triple the ingredients for a bigger salad.
