Chicken Kabsa

Ingredients
  

Main:

  • Chicken 1 whole cut into big pcs.
  • Rice 4 Cups
  • Sunflower Oil For Shallow Frying

For Sauce:

  • Butter
  • Onions 2 Large chopped finely
  • Garlic 8 chopped finely
  • Tomatoes 2 Large chopped finely
  • Kashmiri Chilly Powder
  • Coriander Powder
  • Tomato Paste 2 tbspns OR Lemon Juice of 1 whole lemon
  • Dry Lemon 3
  • Chicken Stock 2 Cups

Instructions
 

  • Clean Chicken and marinate with Salt, Sugar, Black Pepper, Kashmiri Chilly, Coriander Powder, Cumin Powder. Keep on previous day for best results or else keep in fridge for 15 minutes.
  • Same time, finely chop onions, garlic and tomatoes.
  • Heat Butter, Saute Onions, Add garlic, tomatoes and cook.
  • Add Kashmiri Chilly powder, Coriander Powder, Cumin Powder, Tomato Paste OR Lemon Juice and dry lemon (Optional)
  • Once cooked Add Chicken Stock. And boil and keep aside
  • Fry Chicken Shallow.
  • Take away chicken and add rice to the same oil.
  • Take a dessert spoon of sauce and cover the fried chicken in it by tossing it in a big bowl.
  • Saute the rice for a while and then add the sauce to the rice, add sufficient water and cook the rice.
  • When rice is half cooked, place the chicken pcs on the top and close until rice is full cooked.
  • Garnish with cashew, raisins, parsley and boiled egg :)

Notes

The spices and ingredients can be altered according to different tastes in different places or families.
