For preparing brinjal coconut milk curry, first mix together brinjal, onion, ginger, garlic, green chillies, oil, coriander, turmeric, chilli powder and required salt. Mix it well.
In a sauce pan, add the brinjal mixture and water. Cook the brinjal. When its on half way, add the gambooge in it and boil again.
Add the thick coconut milk in it and cook again for 5 minutes. The gravy will turn into thick consistency.
Add curry leaves on top. Delicious brinjal coconut milk curry ready to be served with hot steamed rice.
