Ingredients
  

  • 5 nos Raw green mango
  • 2 tsp Ginger–garlic paste
  • 2 nos Green chillies chopped
  • 1/2 tsp Mustard seeds
  • 1/4 tsp Turmeric powder
  • 2 tsp Red chilly powder Kashmiri chilly
  • 1/4 tsp Fenugreek powder Uluva podi
  • 2 pinches Asafoetida powder Kayam
  • 1 tsp Vinegar optional
  • 2-3 springs Curry leaves
  • 2 tsp Gingelly oil
  • Salt As reqd

Instructions
 

  • Wash and cut the mango into small pieces, with or without the peel, discarding the seed.
  • Add salt and green chillies and mix well. Keep for one day.
  • In a small kadai heat oil.
  • Once hot, add in the mustard seeds and allow them to splutter.
  • Add in gingervgarlic paste and saute till light brown.
  • Add in turmeric powder, red chilly powder, asafoetida powder and fenugreek powder.
  • Stir and add curry leaves(if required salt can be added). Take it off the flame.
  • Add the seasoning to the cut mangoes and mix well. 9)Add vinegar and then mix well.
