For preparing quick sambhar, soak tamarind in water and keep aside for sometime. After that extract tamarind juice.
Cook the lentils along with turmeric powder and salt in a pressure cooker with 4 cups water.
Add the veggies: ladies finger's, drumstick, cucumber, tomato, onion and carrot to this cooker. Cook it till one whistle is heard.
Heat a kadai, add coriander powder, turmeric powder, red chilly powder and fenugreek powder. Keep stirring for 2 minutes.
Pour in the tamarind juice and stir for one minute.
Add this mix to cooker(where lentils and vegetables are there).
Switch off flame and add asafoetida powder and coriander leaves.
Take a fry pan add oil, splutter mustard seeds, add dried chillies and curry leaves. Pour this into cooker.
Quick sambhar is ready. Serve it hot.
