Eggplant Potato Yoghurt Dip

Ingredients
  

  • 2 nos Eggplant Vazhuthananga
  • 1 no Potato
  • 1 pod Garlic
  • 1 cup Yoghurt
  • Cumin powder A pinch
  • Salt As reqd
  • Coriander leaves chopped

Instructions
 

  • For preparing eggplant potato yoghurt dip, first place egg plant and garlic in a grill pan and grill it till tender.
  • Cook the potato and mash it well.
  • When grilling done, peel the skin of egg plant and keep it in a bowl.
  • Likewise, peel garlic skin and take out the pulp.
  • Mash it with fork. Mix the mashed potato also. Mix well.
  • Add salt and cumin powder.
  • Pour the yoghurt in it and serve decorated with chopped coriander.
  • Eggplant potato yoghurt dip is ready. Serve along with crispy potato chips, BBQ/grilled recipes.
