For preparing chettinad style mutton, heat ghee in a pan, add little oil also.
Add bay leaves, khus khus, cinnamon, cloves and mutton. Fry well for 10 minutes.
In another pan, pour little oil. Fry cumin seeds, shallots, dry chillies, ginger and garlic.
Crush the onion mixture(do not make paste).
After 10 minutes of frying mutton, add the crushed onion. Fry well. Add tomato and fry well.
When it becomes soft, add coriander and turmeric powder. Add required salt.
Add hot water and cover with a lid.
Cook the mutton.
When done, add the meat masala and curry leaves. Drain excess water and make semi masala.
Chettinad style mutton is ready.
