For preparing tasty vegetable cutlet, first cook potato, smash well & keep aside.
Take a pan, pour oil & splutter mustard seeds when oil is hot.
Saute onion for 5 minutes.
Add ginger garlic paste, carrot & beans. Saute well.
Add garam masala, pepper powder, chilly powder, chopped coriander leaves & required salt.
Turn off the gas.
Add smashed potatoes & mix thoroughly.
Make into round or oval shapes.
Powder the bread slices in a mixi/food processor.
Beat egg white.
Dip the cutlet in egg white & then coat with bread powder.
Fry vegetable cutlet when oil is hot.
Cover in a tissue for 2/3 min so that excess oil will be absorbed.
