Instructions
For preparing icy pineapple with sauce, heat water & sugar till sugar has dissolved.
Boil till mixture becomes a golden syrup. Allow to cool.
Cut pineapple into small pieces.
Blend in a mixer till thick puree is formed. In a little bit of sugar syrup, dissolve the gelatine & heat over a pan of water till dissolved.
Add pineapple puree and essence to the sugar syrup.
Fold in beaten cream & freeze.
Serve garnished with chopped nuts & pineapple sauce.
