1 no Ripe pineapple (medium)125 g Sugar3 tsp Gelatine1/2 cup Cream500 ml Water2 tsp Pineapple essence1/2 cup NutsYellow food color (Few drops) For preparing icy pineapple with sauce, heat water & sugar till sugar has dissolved.Boil till mixture becomes a golden syrup. Allow to cool.Cut pineapple into small pieces.Blend in a mixer till thick puree is formed. In a little bit of sugar syrup, dissolve the gelatine & heat over a pan of water till dissolved.Add pineapple puree and essence to the sugar syrup.Fold in beaten cream & freeze.Serve garnished with chopped nuts & pineapple sauce.
