Peanut Rice

Ingredients
  

  • 2 cups Long grain rice boiled with grains separated
  • 1/2 cup Peanuts roasted
  • 1 no Onion finely chopped, big
  • 1 tbsp Coriander leaves chopped
  • 1/2 cup Coconut grated
  • 1 tsp Sesame seeds
  • 1/2 tsp Mustard seeds
  • 1/2 tsp Chilly powder
  • 1/4 tsp Turmeric powder
  • 1 spring Curry leaves
  • 2 tbsp Oil
  • Salt As reqd

Instructions
 

  • For preparing peanut rice, heat oil in a non stick pan and splutter mustard seeds.
  • Add curry leaves, chilly powder and turmeric powder. Stir it for a minute.
  • Then add in the onion and sesame seeds. When it becomes golden, add the coconut and peanuts. Fry well.
  • Add the rice and mix well.
  • Garnish with coriander leaves.
  • Peanut rice is ready. Serve at once.
