For preparing chicken in cashews and vegetables, first heat some oil in a pan. Roast cashews slightly and keep aside.
In the same oil, add onion, vegetables and capsicum. Shallow fry and keep aside.
Crush garlic, onion, dry red chillies, vinegar and cumin seeds.
Heat a wok, add oil and fry chicken cubes. Add the crushed garlic mixture and fry well. Add ginger and fry again.
Add vegetables, cashews and oyster sauce. Cover with a lid and cook in low heat until done.
Mix corn flour in water and pour over.
Add celery and give a toss.
Chicken in cashew and vegetables is ready.
