Healthy Vegetable Noodles

Noodles with vegetables - Healthy Vegetable Noodles

Ingredients
  

  • 300 g Noodles
  • 1 tbsp Green chilly sauce
  • 1 inch Ginger chopped
  • 3-4 cloves Garlic chopped
  • 1 no Onion sliced thin
  • 1 no Capsicum sliced
  • 10 Beans – 8 sliced
  • 1 no Carrot cut into thin strips
  • 1 cup Cabbage sliced
  • 1 cup Cauliflower florets sliced
  • 1 tsp Sugar
  • 1 tbsp Vinegar
  • 10 cups Water
  • 3 tbsp Oil
  • Salt As reqd

Instructions
 

  • For preparing healthy vegetable noodles, boil water, add noodles and salt. Cook uncovered for couple of minutes till the noodles are soft and firm but not mushy.
  • Drain and wash with cold water. Add a little bit of oil to avoid the noodles from sticking.
  • Heat two tablespoons of oil in a vessel, add chopped ginger, garlic and stir-fry. 4)Add sliced onion and saute until it turns translucent.
  • Add carrot, beans, cabbage, cauliflower florets and capsicum. Stir-fry for two minutes or until the vegetables are cooked but still retain the crispness.
  • Then add pepper powder, ajinomoto, salt and sugar. Stir in the chilly sauce and the vinegar.
  • Stir in the noodles and fry for few minutes.
  • Healthy vegetable noodles is ready. Serve hot with chilly sauce and tomato sauce.
