Mixed Vegetable Kuruma

Ingredients
  

  • 1/2 cup Cauliflower diced
  • 1/2 cup Carrots diced
  • 1/2 cup Beans sliced
  • 1/2 cup Capsicum diced
  • 1 cup Paneer cubes
  • 1 no Onion chopped
  • 3 nos Greed chillies chopped
  • Ginger garlic paste - 1 tbsp
  • 1 tsp Garam masala
  • 1 tsp Cumin seeds
  • 1 tsp Coriander powder
  • 2 nos Tomato chopped
  • 1 tsp Chilly powder
  • 1 tsp Turmeric powder
  • 1 cup Thick coconut milk
  • Salt As reqd
  • Coriander leaves Few

Instructions
 

  • For preparing mixed vegetable kuruma, heat a pressure cooker and add oil. Add garam masala and onion. Shallow fry it.
  • Grind it and keep aside.
  • In the same cooker, add tomato and fry. Add ground onion paste. green chillies and ginger-garlic paste.
  • Add turmeric, chilly powder, coriander and salt. Add the vegetables except paneer.
  • Add little water and pressure cook it.
  • When done, add paneer and coconut milk. Cook it.
  • Add the coriander leaves on top and serve hot with chapathis.
  • Mixed vegetable kuruma is ready.
