For preparing covered prawn fry, cook the prawns in 1/2 tsp pepper powder, soya sauce, salt, turmeric powder and some water. Drain the water and keep it aside.
Beat the egg white well in a bowl.
Mix in corn flour, maida, vinegar and celery to the above egg white to make a thick paste. Keep it aside.
Heat oil in a china dish.
Dip the cooked prawns in the paste and fry it in oil till it becomes crispy. Cover and cook it.
