Caramel Ice-Cream

Ingredients
  

  • 1/2 litre Milk
  • 5 nos Egg yolks
  • 180 g Sugar
  • 100 g Cream

Instructions
 

  • For preparing caramel ice-cream, heat water with 100g of sugar to make a brown caramel.
  • Boil the milk and remove it from the flame.
  • Mix the caramel with the milk.
  • Whisk egg yolks and the remaining sugar well.
  • Pour in the hot caramel milk to it and whisk again.
  • Heat the mixture, stirring it continuously till it thickens. Allow it to cool.
  • Add in the cream and whip the mixture.
  • Pour it into an ice-cream churner and freeze it.
  • Caramel ice-cream is ready. Serve chilled.
