Brinjal-Vazhuthananga In Yogurt

Brinjal is mixed in yoghurt and then seasoned

Ingredients
  

  • 5 nos Brinjal chopped
  • 3 nos Red chillies broken into two
  • 2 springs Curry leaves
  • 1 tsp Mustard seeds
  • 2 tsp Coconut oil
  • 3/4 cup Yogurt
  • Salt As reqd

Instructions
 

  • For preparing binjal in yogurt, cook the brinjal with required amount of water and salt. Drain the water well.
  • Mix the brinjal with yogurt .
  • Heat coconut oil in a pan and splutter mustard seeds. Then add red chillies and curry leaves.
  • Pour it into the yogurt mixed with brinjal and mix well.
  • Brinjal/vazhuthananga in yogurt is ready. Serve with plain rice.
